If you like your crock pot, you're gonna love these!

Mexican Chicken Goodness

What you need:
3 large boneless, skinless chicken breasts
1 can black beans, drained
1 can kernel corn, drained
1 jar of salsa
1 package taco seasoning
8 oz. cream cheese

What you do:
Place the chicken breasts in the bottom of the crock pot. Add black beans, corn, salsa, and taco seasoning on top of the chicken. Cook on low for 7-8 hours. 30 minutes before it's done, add the cream cheese block and cook on low until melted. Then, shred the chicken with two forks and mix it all together.

*This is great in tacos, on tortilla chips as nachos, or just as a mexican dip! It makes great leftovers since it's so versatile.

Italian pot roast

What you need:
1 large onion, cut in half and then sliced
1 (2 1/2 - 3 lb) boneless beef chuck roast, trimmed
1 tsp. pepper
1 envelope dry onion soup mix
14 oz. can beef broth
8 oz. can tomato sauce

What you do:
Place the onion in the bottom of the crock pot. Place the roast on top of the onion and sprinkle with pepper and onion soup mix. Pour beef broth and tomato sauce over the top of the roast. Cook on low for 7-8 hours.

*I also add carrots. Our favorite way to eat this is over noodles!
